Somali Xalwo/Xalwa
Indulge in the delectable and quintessential Somali dessert – Xalwa (Xalwad), which is perfect for satisfying your sweet cravings. Our recipe puts a unique spin on the traditional Halwa by incorporating economical ingredients and making it easier to prepare. The Xalwa gets its buttery flavor by adding browned butter just five minutes before it’s done. Lemon juice and corn-starch work together to thicken and preserve the dessert’s texture. By using a candy thermometer, you can ensure that the Halwa is cooked to perfection and at the right temperature.
Ingredients:
- 2.5 cups (500 g) granulated white sugar
- 2.5 cups (625 mL) water
- 1/2 tbsp (7.5 mL) lemon juice
- 2 tbsp (32.5 mL) unsalted butter
- 1 tbsp (10 g) ground cardamom

- 5/8 cups (187.5 mL) canola oil or vegetable oil

Directions:
- In a small saucepan set over medium heat, brown the unsalted butter for 2 minutes. Turn off the heat, then add the cardamom and nutmeg.

- In a 4-litre pot, combine the sugar, water, and lemon juice. Bring to a boil over medium-high heat.
- Stir in the cornstarch mixture. The cooking time for the halwa is 45 minutes starting from now. Cover to avoid spattering.
- Cook for 5 minutes, then add the oil all at once and stir well. Cover and cook for another 5 minutes.
- Uncover and stir every 5 minutes.
- After 30 minutes, add the cardamom and nutmeg. Stir well. Stir continuously for the remaining 15 minutes.
- Using a ladle, remove any extra oil then add the browned butter. Add the peanuts, if using, then stir well and turn off the heat.
- The total cooking time is 45 minutes or when the temperature of the halwa reaches 230°F/110°C.
