Ingredients for Somali Rice

Xawaash Spice Blend:

  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp ground cardamom
  • 1 tsp black pepper
  • 1 tsp ground cloves

For the Rice Pilaf (Bariis):

  • 2 cups basmati rice, rinsed
  • 1/4 cup vegetable oil
  • 1 white onion, sliced
  • 4 garlic cloves, minced
  • 1 tomato, diced
  • 1 cinnamon stick
  • 1 vegetable bouillon cube
  • 1/4 cup fresh cilantro stalks, minced
  • 1 bay leaf
  • 1/4 cup raisins
  • 1 yellow onion, sliced
  • 1 red bell pepper, sliced
  • 1–2 lbs lamb leg, cut into cubes
  • Oil for frying (avoid olive oil)
  • Salt to taste
  • Fresh cilantro for garnish
  • 2 ripe bananas

Preparation Steps

1. Prepare the Xawaash Spice Blend:

Combine all the spices listed for the Xawaash blend in a small bowl. Reserve 1 tbsp of the blend for the rice; use the rest to marinate the lamb.

2. Marinate the Lamb:

Mix the lamb cubes with the Xawaash spice blend, salt, and just enough oil to lightly coat the meat. Cover and refrigerate for 24–48 hours.

3. Roast the Lamb:

Preheat the oven to 350°F (177°C). Place the marinated lamb on a baking tray and roast for 30–35 minutes.

4. Cook the Rice Pilaf:

  • Heat 1/4 cup of oil in a large pot or Dutch oven over medium heat. Add the sliced white onion, garlic, tomato, and cinnamon stick. Cook until the onions caramelise and the mixture deepens in colour, about 8–10 minutes.
  • Stir in the bouillon cube and minced cilantro stalks. Allow the bouillon to dissolve completely.
  • Add 1 tbsp of the reserved Xawaash spice blend and mix thoroughly. Stir in the rinsed basmati rice, ensuring it is well coated.
  • Pour in 2.5 cups of boiling water, add the bay leaf, and bring the mixture to a boil. Cover the pot with a tight-fitting lid and transfer it to the oven. Bake for 20 minutes.

5. Prepare the Toppings:

  • Heat a skillet over medium-high heat with oil. Sauté the sliced yellow onion and red bell pepper until the onions caramelise and the peppers soften. Season with salt.
  • Set aside the caramelised mixture.

6. Assemble the Dish:

  • Remove the rice from the oven and discard the cinnamon stick and bay leaf. Fluff the rice with a fork and stir in the raisins.
  • Arrange the rice on a large serving platter. Top with the roasted lamb, caramelised onion-pepper mixture, and fresh cilantro.

7. Serve with Bananas:

Place peeled bananas on the sides of the dish. Traditionally, Somali rice is eaten with the hands, combining the rice, lamb, and banana for a harmonious bite.

Why This Somali Rice Recipe Stands Out

The combination of spices in the Xawaash blend creates a robust foundation, while the caramelised onions and raisins add layers of sweetness. The banana is a surprising yet essential component, balancing the savoury and sweet flavours. Roasting the lamb ensures it’s tender and flavourful, perfect for complementing the spiced rice.

Tips for Success:

  • Use fresh, high-quality spices for the Xawaash blend to ensure maximum flavour.
  • Allow time for marinating the lamb—it makes all the difference in taste and tenderness.
  • Don’t skip the banana—it’s a unique and authentic touch that truly elevates the dish.

Somali Rice (Bariis) isn’t just a meal; it’s an experience. Whether you’re sharing it with loved ones or trying it for the first time, this dish captures the heart of Somali cuisine. Try it once, and it will become a cherished favourite in your culinary repertoire.
